Gluten Free Ooey Gooey Rice Krispy Treats

These yummy, gooey treats are not only gluten free they are corn free too!

 Ingredients:
1 cup smooth organic peanut butter
1 cup agave syrup
1/2 cup packed brown sugar
1/2 cup white sugar
1 cup peanuts
More chocolate chips for the topping

Directions:

  1. In a large saucepan, place peanut butter, agave syrup, brown sugar, and white sugar. 
  2. Heat over medium heat; stirring until smooth.
  3. Remove from heat and add cereal, peanuts, and chocolate chips.  Stir until well coated.
  4. Press the cereal mixture into a parchment lined 9x13 baking dish or a jellyroll pan depending on what thickness you want.  
  5. Sprinkle more Enjoy Life Chocolate Chips on top.  Let them melt.  If they don't melt completely.  Place in a warm oven and let them sit for a few minutes until the chips melt.  
  6. Spread the melted chips with a butter knife.
  7. Allow to cool completely before cutting into squares.

Dairy Free Blueberry Crumble Popsicles

This recipe is adapted from the Taste of Home recipe called Blueberry Cheesecake Ice Cream.  
It has a few steps, but it is worth it.


Ingredients:
Blueberry mixture
1/4 cup sugar
1-1/2 tsp arrowroot or cornstarch
1/4 cup water
3/4 cup blueberries
1-1/2 tsp lemon juice

Graham Cracker Mixture
1 Tbsp sugar
1/4 tsp ground cinnamon

Ice Cream
3/4 cup sugar
2 cans coconut milk ( not light), chilled
1 tsp vanilla extract

Directions:
In a small saucepan, combine sugar and arrowroot or cornstarch.  Gradually stir in the blueberries and lemon juice.  Bring to a boil.  Reduce heat to low and let simmer for 5 minutes.  It should thicken.       Stir occasionally.   Remove from heat and set aside.  Chill in refrigerator before adding to ice cream mixture.

In a large bowl combine gf graham cracker crumbs, sugar, cinnamon, and shortening.  Pat onto a cookie sheet.  This does not have to fill the whole pan.  Mine was just spread out in the center.  Bake at 350 degrees for 8-10 minutes.  Remove and let cool completely.  This will break apart easily and crumble, but should be chunky enough to add to the ice cream.

In a blender (Vita Mix), add coconut milk, sugar, and vanilla extract.  Blend on high speed for 1 minute. Pour ice cream into a large bowl and fold in the blueberry mixture and the graham cracker pieces.  Pour into a popsicle mold and freeze until frozen solid.

Graham crackers baked and ready to crumble

Broiled Boomerang Bananas- An Allergy Free Dessert


Ingredients:

Directions:
  • Mix brown sugar and cinnamon.
  • Halve the bananas.

  • On a cookie sheet lined with aluminum foil, place the halved bananas.  Spray the bananas with cooking spray ( I used an extra virgin olive oil spray.  You can brush the banana with oil instead if  you like.)
  • Sprinkle the sugar mixture.  Sprinkle on as many chocolate chips as you like.

Quick GF Icecream Cone Cupcakes


I made these buy using Let's Do Organic Ice Cream Cones .  I used my favorite chocolate cake mix, Gluten Free Pantry - Wheat Free Chocolate Cake Mix .

Ingredients:

Directions:
Mix the chocolate cake mix according to the package.  Wrap the cones in tin foil to prevent burning.  Fill the ice cream cone just to the top of the center circle.  This will allow the cake to rise without spilling over.


Place foil wrapped cone in a muffin tin.  Cook in the middle of the oven at 350 degrees for 20-30 minutes.  Cook until a toothpick comes clean.   Take off the foil and let cool.
Frost cupcakes with your favorite frosting and roll in sprinkles.
These sprinkles below are all natural and in the shape of snowflakes.

Fat Egg, Skinny Egg-Learning about Osmosis

What is Osmosis?
 The moving of water across a semi-permeable  membrane, from an area of high concentration (where there are a lot molecules) to an area of low concentration (where there are less molecules).


First you need to perform the classic Naked Egg Experiment.

You will need:
  • 2 bowls
  • 2 eggs without cracks
  • distilled white vinegar        
 Procedure:
  1. Place each egg into a bowl.
  2. Cover each egg completely with vinegar.
  3. Let the eggs stand in vinegar for 24 hours.
  4. Gently rinse off eggs in clean water.
Things to notice and record:
  • How egg looks and feels with its egg shell?
  • How egg looks and feels without its shell?

Observing Osmosis

You will need:
  • 2 bowls
  • water
  • 2 Tbsp salt
  • 1/2 cup corn syrup
Procedure:
  1. Place each well rinsed egg into a bowl.
  2. Fill each bowl with water, covering each egg.
  3. In one bowl add 2 Tbsp salt to the bowl.
  4. In the other bowl add 1/2 cup corn syrup to the bowl.
  5. Observe the eggs for the next 24 hours. 
Things to notice and record?
  • Which egg became larger? smaller?
  • Which egg show that material can move into a cell?
  • Which egg shows that material can move out of a cell?

Hypotonic solution:  There are fewer molecules M&M's on the outside of the cell than on the inside.


Use 20 M&M's (which represent molecules), a plastic lid (to represent the egg in our experiment), and a piece of paper (represents the water solution).  Place the plastic lid on top of the piece of paper.   Place  14 molecule M&M's inside the "egg".  Put 6 M&M's  on the outside of the egg.  Which has more molecules?  
The water solution and the egg want to have the same number of molecules.  Or said another way, they want to be in"equilibrium".   Move the M&M's until you have the same number of M&M's inside the egg as outside of the egg.  





Hypertonic solution: There are more molecule M&M's on the outside of the cell than on the inside.




Place 14 molecule M&M's outside of the "egg".  Put 6 molecule M&M's inside the egg.  Which has more molecules? Remember that they want to have the same number of molecules M&M's.  Move the M&M's so that you have the same number in the cell as outside the cell.

Purple Nurple Smoothie (GFCF)


1 cup of coconut milk (not light)
1 cup ice cubes
1 tsp vanilla extract
3/4 cup of blackberries
1/4 cup of sugar

Add all ingredients to the blender.  Blend on high until all ingredients are well mixed.  Pour into glasses and enjoy!

Bean Mosaics


Get several varieties of beans.  Draw a picture first on your paper plate.  That will give you an outline for your picture.   I used a paintbrush to apply the glue to the plate and place the beans on the design.
